In conjunction with my Food & Drink Trends 2023 report I have now concluded my research into emerging cuisines and flavours – what’s hot and what’s not.
My analysis has identified exciting opportunities for innovation both in terms of flavours and products which I’ve featured in my report and with the food and drink sector remaining vibrant and dynamic, the pace of change continues to accelerate.
With consumers no longer willing to accept mediocre, as demonstrated by the melt down in mid-tier eateries, it’s the independents who’s livelihoods depend on the uniqueness of their food, service levels and customer experience who are experiencing highest growth.

And this has manifested in a demand from consumers for bold and exciting cuisines and flavours within retail, bringing new experiences to diners at home who’s hunger for the different remains insatiable – as demonstrated by the elevation of product quality and breadth of cuisines within the top tier of the ready meals category for example.
